Key Lime Pie

The best pie I’ve ever made!!!! The crust was the best part so don’t get overwhelmed and buy a premade one. Use this 3 ingredient super easy recipe I promise you will be obsessed!!

Crust:
- 2 boxes of Simple Mills Honey Cinnamon Thins (1.5 cups)
- 1/4 cup packed brown sugar
- 4 tbsp melted butter
You could also add shredded coconut for a little twist

Pie Filling
- 3 cups sweetened condensed milk
- 3/4 cup lime (or key lime) juice
- 1/2 cup sour cream
- 1tbsp grated key lime zest + extra for topping after it has been refrigerated

Blend the crackers together in a food processor or mixer then add them to a bowl with the brown sugar. Add this mixture to the pie dish and form a little hole in the middle where you will pour your melted butter. Mix the butter and crackers with a fork and press it down to make a crust starting with the sides first.
Bake in oven at 375* for 10min.

While the crust is baking, mix all of the filling ingredients together in a bowl. After the crust has cooked and cooled for a bit, drop the oven temp down to 350* & gently pour the filling in the crust making sure not to go over the sides.*
Bake the pie at 350* for 6-9min or just until small bubbles form at the surface but don’t let the top of the pie brown.
Set in the fridge for at least an hour but overnight will give you the best taste!

**I had a bit of extra filling and poured it into a glass dish that I also baked for more of like a custard because I didn’t want to waste :)
