Tomatillo Salsa


Saw some beautiful green tomatillos at the Farmer’s Market and I knew I had to make salsa!

Recipe:
1 lb tomatillos
2 jalapeños
1/2 white onion
1 garlic clove
1tsp sea salt
1tsp cumin
1/2tbsp honey
handful of cilantro
juice of 1 lime

Remove shells and wash tomatillos and all produce. Cut jalapeños, onions & garlic and place them on baking sheet. Bake at 420* for about 20minutes. I broiled them on high as well for the last 3-5 minutes just to get a nice char on the skins.
Remove and let cool before placing in food processor. Blend nicely then add spices and pulse again not for too long just to blend it all well.

Enjoy with some chips or with slow roasted meat or tacos or anything you’d like!
