Homemade Bone Broth

One of the easiest ways to save some $$ is by purchasing a whole chicken, using the meat for several meals and the carcass for your own homemade bone broth. Save the bones & freeze them as you go to make a collagen-rich, gut healing, mineral rich superfood. This doesn’t have to be an all day task & can easily be done in just a few steps if you have the right ingredients and tools on hand.
This broth I made here is the most basic but it can be diversified and personalized to be even more flavorful depending on what ingredients you add & what bones you have. Adding things like chicken feet, fresh herbs & spices, veggie scrapes, or even roasting your bones and veggies before hand can all make the broth even more tasty & beneficial. I’ll usually use this type of broth to cook my grains (rice, oats & quinoa) in and as a base for stews and soups. If I want to make some to sip on I’ll usually add different fresh herbs and spices to make it more tasty on its own.
My pro tip is to never skip the Apple Cider Vinegar as this helps the bones break down and pulls the collagen out of them so your broth can be extra jiggly and rich. I use an instant pot on the pressure cooker setting for about 120-150minutes. I then strain it and divide it into mason jars which I freeze after they’ve been cooled to avoid them cracking/ breaking (yes I’ve had some mishaps and have definitely learned my lesson hehe).

Recipe:
1 whole chicken carcass
1 celery
3-4 carrots
1 onion
sea salt
black pepper
1tbsp apple cider vinegar
filtered water

Pressure cook for 120-150 min
If you want to do it the traditional way I would let it simmer for 8-24hrs.
