Clara’s Granola Cookies

These cookies are fail-proof and always a HIT! You can customize the nuts and seeds you’d like to use to your preference or with what you have on hand. Using things like dried cranberries or chunks of date is always a fun add-in!

Ingredients:

2 cups (180g) rolled oats

1 cup (110g) pecans

1/4 cup (40g) coconut shreds

1/3 cup (50g) flax meal

1/3 cup (70g) chia seeds

1/3 cup (100g) pumpkin seeds

1.5 sticks (170g) of butter, softened

3/4 cup (180g) brown sugar 

  • *I mix 1 cup of cane sugar with 1 tbsp of molasses to make brown sugar

2 eggs 

1.5 tsp vanilla extract

1 (130g) cup flour

1/2 tsp baking soda

1/2 tsp cinnamon

1/2 tsp salt

Recipe:

  1. Combine the oats, nuts, and seeds and toast at 325*F for 10-12minutes.

  2. In a separate bowl, whisk the softened butter and sugar. Once the sugar has dissolved, add in the eggs and vanilla. 

  3. In a separate bowl, combine the flour, baking soda, cinnamon and salt and mix. 

  4. Add the toasted elements to the flour mixture

  5. Add the wet mixture (eggs, butter and sugar) to the dry mix, and combine until it forms a dough. 

  6. Chill the batter in the fridge for at least 1 hour.

  7. When ready to bake, preheat oven to 350*F and form dough into 1tbsp balls. 

Yield:

40-45 small cookies
